Jambalaya

Let’s get this straight, I have never attempted jambalaya before. I did so on a night when I’m home by about half five, and Amy’s out the door by 7. I wasn’t sure how I was doing for time, so I did rush it a wee bit. Tasted amazing, even if the rice needed a little…

Pulled duck burger

I based this one something Maria Elia made on Saturday Kitchen a few weeks ago. I made the brine yesterday and soaked the duck overnight. After four hours of slow cooking my duck looked something like this. Mmmmmmmm. This is pretty much where I took things off recipe. Take the duck from the bone, straining…

Topless toasted sandwich

So one of the things the hairy dieters point out, is that most of the calorie content in a sandwich is the bread. For this I sliced some tikka chicken fillets, and laid them on a home made mixture of cucumber, spring onion and some low-far yogurt. Kinda like tzatziki, but without the mint. I…

Tiger prawns with ginger, chilli, and lime

Whichever way you voted to leave the EU, it was a close run thing. In any event, it has been incredibly divisive, and comfort food is definitely required. We were in town this morning so I popped to the fish monger to have a gander, and picked up some tiger prawns. I’ll admit, the preparation…

Leftovers

Leftovers  are fantastic, they are the basis for so many dishes around the world. I’ve got a secret. I occasionally make more food for dinner, so I have some left over. Tonight I took leftover spag bol from last night, took a couple of leftover tortillas and made some tacos. Home-made tacos are really easy…

Pseudo Oriental Broth…Thing.

I’m always really edgy about recipes that claim to be ‘authentic’. This  dish has its roots in China, by which I mean it is vaguely based on something some friends from Hong Kong taught me during my university days, but is far from the real thing. This is authentic Chinese food in the same way…

Chicken Paprikash

Something Theo (my adorable 16 month old son) ‘bought’ me for Father’s day, was The Hairy Dieters, by Dave Myers, and Si King, aka, the Hairy Bikers. I do like my food, and this is something that will hopefully allow me to both continue that love, and try and loose a bit of weight. He also bought…

Bangers n’ Mash

I love sausages, and I love a good mash, put them together with a nice onion gravy? Divine! Sausages served with leek , garlic and basil mash, lying in a shallot gravy. I don’t mind cooking with cheap meat, you can make some amazing meals with cheap cuts, but I’d really recommend getting good quality…

Leaning tower of Eton

So some of these posts are going to be of reasonably healthy food. This isn’t one of those. I love Eton Mess, it’s beautifully simple, wonderfully easy, and incredibly delicious. Whipped double cream, broken pieces of crunchy meringue, raspberries and  strawberries. All served with a raspberry coulis, from Sainsbury’s Taste the Difference range.
